Beijing cuisine uses strong flavored roots and vegetables, and the food tends to be more substantial. Instead of rice, which is the staple diet in southern cuisine, more noodles, dumplings (jiaozi), and bread (baked, steamed of fried) are served in Peking-style restaurants.
